Um Ahmad's blend, from hillsides near Jenin she has walked for forty-five years. Shade-dried, hand-rubbed with roasted sesame and a little of Um Salim's sumac.

Wild thyme from terraces near Jenin. Sesame from the Jordan Valley. Sumac from Nablus.
